On the last Thursday of every month, UNI honors kaitai, the centuries-old Japanese tradition of breaking down a whole bluefin tuna. Before guests' eyes, our master cutter draws fillets and loins from the maguro with the precision passed down from the markets of Tsukiji, where reverence for the ingredient and mastery of the blade become one. This rare display of silence and skill culminates in a tasting of the tuna's finest cuts, from the melting toro to the purest akami.
